Chili Beans Casserole

1 large bag regular Fritos
1 large onion, chopped
1 large can chilies
1 1/2 C. grated cheese

Place half the Fritos in a baking dish. Arrange chopped onion and half the cheese on the Fritos. Pour chili over onions and cheese. Top with remaining cheese and Fritos. Bake at 350 for 15 to 20 minutes. 

Crock Pot Chicken And Rice

1 chicken, cut up
1 can cream of mushroom soup
1 env. Lipton onion soup
1 C. rice
1 1/2 C. water

Mix soups, rice and water; pour into crock pot. Lay chicken on top. Cover and cook on low in crock pot all day, stirring occasionally.

Chili Relleno Casserole

3-7 oz. cans green chilies
1 lb. Cheddar cheese
1 lb. Jack cheese
1 large can evaporated milk
4 eggs
3 T. flour

Flatten half of chilies in casserole. Cover with half of the cheese, then rest of chilies and then cheese. Beat egg yolks and whites separately. Add milk and flour to egg yolks; salt and pepper to taste. Fold in whites. Pour mixture over chilies and cheese. Bake at 350 for 1 hour.

Sour Cream Enchiladas

2cans cream of chicken soup
1 small can diced green chilies
1 pt. sour cream
1/2 C. milk
1 dozen flour tortillas
2 C. grated cheese
2 C. shredded chicken


Mix together first four ingredients; stir well and bring to a boil. Roll cheese and chicken into tortillas. Place in a cake pan. Put liquid mixture over tortillas. Sprinkle with grated cheese. Bake at 450 for 15 minutes. Serve hot.


To eat, one must chew...to speak, one must think.

My Mom's Chicken Tortilla Casserole

Flour tortilla Cooked and cubed chicken or turkey
1 can cream of mushroom soup
1 can cream of chicken soup
1 small can diced green chilies
1 large onion
Montere Jack cheese

Line bottom baking dish with strips of tortillas. Top with chicken or turkey. Combine soup, chilies and onion; pour over chicken. Top with cheese. Bake 350 for 15 to 20 minutes or until hot and bubbly.

Skillet Kielbasa & Veggies

This Recipe is so simple and convenient. Replace any of the
vegetables with others to suit your family's taste.
16-oz. pkg. Kielbasa, sliced
1/4 C. onion, diced
16-oz. pkg. shredded cabbage
15-1/4 oz. can corn, drained
1 Lb. yellow squash, diced

Saute Kielbasa and onion in a lightly greased skillet over medium heat. Add remaining ingredients and simmer until vegetables are tender, about 8 minutes. Serves 4.

To Celebrate Earth Day

Earth Day!!!


EARTH
 Earth day isn't just an ordinary day it's a day when you clean and help the Earth. Everyone that helps is making better things happen. Growing trees and growing plants and food! I myself once pulled out all of our weeds in our yard (back & front). It took forever but I just wouldn't give up...after about 1 1/2 hours pasted by it was done. I took off my gloves threw them in on bag and layed down... it was hard work but I just never gave up.


What a wonderful world!
 Earth is our life just think what if you never took a shower and stunk and looked bad it's the same as if we never helped Earth it would be ugly. But it's getting better and better because we are helping. Even if it takes hours and hours don't stop keep going. As I always say "I f you don't started you never finish"

Beachfront Crab Cakes

These freeze well...just reheat on a baking sheet.
1 Lb. crabmeat
1 egg, beaten
8 to 10 buttery round crackers, crushed
1/4 C. onion, diced
1/8 T. pepper
2 to 3 sprigs fresh parsley, minced
2 to 3 T. mayo oil for frying

Combine crabmeat, egg, crackers, onion, pepper and parsley in a large bowl. Stir in mayo; moisten hands with cold water and mix well. Form into 3-inch patties. In a skillet, heat just enough oil to cover crab cakes; fry on both sides until golden. Place on paper towels to drain. Makes 4 servings.

Pick up some paper plates and cups in seasonal designs...
they'll make dinner fun even when you're in a hurry
and clean-up will be a breeze.

Count Down To Disneyland (Day 6)

ONLY 120 MORE DAYS!!!!
I am so anxious to go there who wouldn't be? It's the happiest place on earth. Well whoever that is there defiantly weird. It's been a busy week for me I've been on and off the computer, I've been writing for the project I'm working on and I've also had to be on my blog so I've been busy all week. So Yep I hope you all have a very nice Easter... 

Beefy Filled Hard Rolls

Ingredients:
2Lbs. ground beef
1/4 C. onion, diced
10-3/4 oz. can cream of mushroom soup
1/2 C. Colby cheese, grated salt and pepper to taste
12 small French hard rolls, sliced and hollowed out

Directions:
Brown ground beef with onion in a skillet over medium heat; drain. Add soup and simmer for 5 minutes. Stir in cheese, salt and pepper; cook until cheese melts. Fill rolls with meat mixture and top with top halves of rolls. Serves 6.

Corn Salad:
Combine two 15-1/4 oz. cans drained corn, one 16-ounce can drained and rinsed black beans, one chopped tomato, 3 chopped green onions and one Tbsp. ground cumin. Drizzle with lime juice to taste; chill or serve at room temerature. Serves 6.

Melon Patch Sherbet:
Cut one large sweet, ripe canaloupe into 6 wedges.Top each wedge with a scoop of favorite sherbet. Serves 6.



Mmm...mashed potatoes are the ultimate comfort food
. Simmer potatoes in chicken broth instead
 of water for delicious flavor.

Holly's Creamy Garlic Chicken

Flatten the chicken between 2 pieces of wax paper...it will cook up quickly and evenly.

Ingredients:
2 T. oil
4 boneless, skinless chicken breasts
1/4 C. mayo-type salad dressing
2 C. frozen stir-fry vegetables
1 T. soy sauce
2 cloves garlic, minced
3 C. cooked rice

Directions:
Heat oil in a large skillet over medium heat. Add chicken; cook for 6 minutes, turning once. Stir in remaining ingredients except rice. Cover and cook 7 minutes, or until chicken is cooked through. Serve over hot rive. Serves 4.
Toasty Garlic Bread:
Combine 1/2 C. softened butter, one clove minced garlic and one Tbsp. chopped fresh parsley. Spread on a loaf or French bread, split lengthwise. Broil for one to 2 minutes, until lightly golden. Makes one loaf.

Lemon Sorbet:
Scoop one pint of lemon sorbet into individual serving dishes. Top each with 2 Tbsp. raspberries and and 1/4 C. pineapple tidbits. Serves 4.

Instant Chicken Parmesan

This is quick and easy...it's a favorite meal in our house.

Ingredients:
28-oz. jar spaghetti sauce
4 to 6 frozen breaded chicken patties
4 to 6 slices provolone cheese
1 to 2 T. grated Parmesan cheese

Directions:
Spread sauce in an ungreased 13"x" baking pan; arrange frozen chicken patties on top. Place a slice of provolone on top of each patty; sprinkle with Parmesan cheese. Bake, covered, at 350 degrees for 20 minutes. Uncover and bake for an additional 5 to 10 minutes, or until cheese is bubbly. Serves 4 to 6.

Garlic Vermicelli Toss:
Toss 4 C.  hot cooked vermicelli or angel hair pasta with 2 Tbsp. olive oil, 2 Tsp. minced garlic and one cup grated Parmesan cheese. Add salt and pepper to taste. Serves 4.

Italian Green Beans:
Toss 2 C. cooked green beans with Italian salad dressing; sprinkle with grated Parmesan cheese, if desired. Serves 4. 

Pork & Apple Skillet Supper

A hearty, tummy-warming dinner...ready in just a few minutes.


Ingredients:
2 T. butter                                                                                       
1/2 T. garlic, minced
1/2 T. salt
1/4 T. pepper
4 3 to 4-oz. pork cube steaks
1 onion, sliced
2 Granny Smith apples, cored and sliced


Directions:
Melt butter in a skillet until sizzling; stir in seasonings. Add pork steaks and onion. Cook over medium-high heat, turning occasionally, until pork is browned, 4 to 6 minutes. Add apples; continue cooking, stirring occasionally, just until tender, 2 to 3 minutes. Place pork steaks on plat; top with apples and onions. Serves 4.


Cabbage & Caraway Saute: Melt 2 Tbsp. butter in a large skillet over medium heat. Add one 16 oz package shredded cabbage; saute until crisp-tender. Remove from heat; stir in one Tsp. caraway seeds. Serves 4.


Sweet Potato Wedges:
Peel 2 sweet potatoes and slice into wedges; toss with olive oil. Bake at 375 degrees until fork-tender, about 20 to 25 minutes. Drizzle with honey, if desired. Serve 4.

I fianlly got done with my "What rides to go on" so now I am on "where to eat first" and I'm also still on "Who to say Hi to" so I am very busy. But still posting. Soft Gingersnap Cookies with White Chocolate Chips.

Originally from Two Peas and Their Pod
1/2 C. unsalted butter, softened
1/2 C. white sugar (plus some to roll dough in)
1/4 C. molasses
1 Tbsp. canola oil
1/2 Tsp. vanilla
3/4 Tsp. cinnamon
3/4 Tsp. ground cloves
1/2 Tsp. ground ginger
1/4 Tsp. fresh nutmeg, grated
1 large egg
1 3/4 C. flour
1 1/8 Tsp. baking soda
1/2 Tsp. salt
3/4 C. white chocolate chips

Preheat the oven to 350 degrees. Line a baking sheet with silpat mat.

Beat the butter and sugar together until creamy. Add the molasses, canola oil, vanilla, cinnamon, cloves, ginger, and nutmeg. Beat until mixed. Add the egg and continue to beat until well combined. Add the baking soda and salt to the flour and mix really well.

Slowly add the flour mixture into the molasses mixture until well combined. Add the white chocolate chips and mix into dough. Scoop the dough into balls (it will be very sticky) and roll into some white sugar. Place on the silpat mat about 2 in. apart. Place into the oven and bake for 10-12 min. Remove the cookies from the oven and let cool for a few minutes before transferring to a rack to cool. And Enjoy!

Lazy Summer Days Fruit Compote

Lay down in bed and enjoy the nice sun. And also enjoy some yummy Fruit Compote.:)

Idredients:
1 C. water
1/2 C. sugar
3/4 C. fresh mint, chopped
1/4 C. bourbon
1 T. fresh lemon juice
Compote:
Most any summer fruit will do. Here's our recipe...
1/4 cantaloupe, seeded
1/4 honeydew, seeded
1/2 Lb. sweet cherries, pitted
3 ripe peaches, thinly sliced
2 T. fresh mint, thinly sliced
fresh mint sprigs for garnish
Directions:
To make syrup, combine water and sugar in a medium saucepan over  low heat until sugar dissolves. Add mint and boil 5 minutes over medium heat. Let cool completely. Strain into a bowl, pressing firmly on the mint to exract flavor. Mix the bourbon and the lemon juice into the syrup. Cover and refrigerate; can be made ahead of time. Scoop melons with a melon baller. Combine all fruits, add syrup and toss. Refrigerate for 30 minutes. Spoon into pretty pedestal glasses and garnish with mint sprigs.

This is my Menu for this week so you know there's nothing really to show but I will try. Monday we don't know what to have but as soon as I know I will do it. This Easter in church we are having an Easter Egg hunt for the activities day for the girls. At our home market in the front entrance we have a big box that says "Donate Candy For The Easter Egg Hunt" we buy a big bag of candy and Donate it to the Easter Egg Hunt. So I am so happy, for Activities Day all of the girls get to fill up the Eggs with all of the candy I think it will be fun for all of us.  And tell me what YOU like about Easter.

Count Down To Disneyland ( Day 2)

My family and I are going to Disneyland for a Vacation. I can't wait I LOVE Disneyland it's the happiest place on Earth. And I thought it would be fun to have a Count Down.
We are going in August and September.

'Mickey'
(Day 1) Today I am trying to make a list of what rides to go on First and I've got to say it is NOT  easy, but it's fun. I am also trying to work on who I should see first like (Mickey Mouse). My favorite character is probably either Mickey Mouse and Goofy and Defiantly Minnie Mouse. My favorite ride is all of them but if I had to choose between three they would be- Splash Mountain, Magic Mountain, and Thunder Rail Road Mountain. Whats yours? Oh, have you ever heard of Hidden Mickeys? Well when I went last year my dad Got a book of them. All they are is Classic Hidden Mickey Heads hidden every where around Disneyland and California Adventure they is some in Walt Disney in Florida so Go and look around. Almost Easter!

It's almost time for Easter Bunnies and Goodies:) Can't wait til' we see kids in there PJ's running out of there bed saying " The Easter Bunny came Mom it came it came." And see there smiles, and then see them reading what the Easter Bunny wrote. I love Easter and the Easter Bunny myself. Well I hope you people have a wonderful Easter.

And don't scare the Easter bunny away! :)

What to make for Picky Kids (Crunchy Chicken Fingers)

Crunchy Chicken Fingers are good for Kids unless they are Vegetarian then I will put a recipe for that, but kids love Crunchy Chicken Fingers I myself love Chicken Fingers excpecially when they are Crunchy. In our home town we have a Grocery Store and they make Chicken Fingers but they make there's Crunchy. So I hope your kids will love this.

Ingredients

  • 2 pounds skinless, boneless chicken breast halves - cut into strips
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1 (12 ounce) package tortilla chips, crushed

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Mix egg beat and milk in a shallow dish or bowl; place crushed chips in a separate shallow dish or bowl. Dip chicken first in egg mixture, then in crushed chips to coat. Place coated chicken on an ungreased cookie sheet.
  3. Bake in preheated oven for 10 minutes; turn sides and bake for another 10 minutes.

Gingerbread Pancakes

On a cold winter morning serve a stack of yummy Delicious Gingerbread Pancakes with the real kind of Maple Syrup and mugs of Hot Mulled Cider.

1 C. all-purpose flour
1 Tbsp. sugar
1 Tsp. baking powder
1 Tsp. ground ginger
1/2 Tsp. salt
1/2 Tsp. baking soda
1/2 Tsp. cinnamon
     Dash of ground cloves
2 Tbsp. molasses
1 Tbsp. vege oil
1 C. buttermilk
1 egg, lightly beaten

     In a large bowl, combine all the dry ingredients. In a small bowl, whisk the molasses, oil, buttermilk, and egg. Slowly pour the liquid mixture into the flour mixture and stir until uniform. Lightly grease a griddle or pan over medium-low heat and cook the pancakes for about 3 minutes on each side. Makes 6 medium pancakes.

Home Made Mini Pizza's

Onions
Shredded Mozzarella
Pizza Sause
Pepperoni
Hamburger Buns

Directions

Spread 1 tbsp. pizza sause on buns, then add topings, place in oven on broil, watch carefully cook to 3 to 5 minutes take them out and enjoy. Also you can put whatever topics you would like such as olives, mushrooms, pinapple, green peppers, chicken, turkey, ham. Whatever you would like on yours.
ENJOY!!!

Pasta Salad

3 C. uncooked pasta
1 1/2 C. Fat Free Zesty Italian Dressing
2 Roma Tomato, diced
1 Cucumber, diced
1 C. Ham, diced
3 Individual String Cheese, sliced
1/4 C. Red Onion, finely diced
Fresh Ground Pepper
Salt

Start with boiling the pasta to a soft al' den ta stoge. Cool in cold water, drain. Toss all ingredients together in a bowl. Chill for 1 hour before serving.

I thought it was so nice and I love them they both are soft...
I just got them today so I will snuggle in my blankets to night.

Mini Key Lime Cheesecakes

I know people usaully eat 9 inch cheesecakes them selves and I know what it's like I do it all the time but when my Mom told me this recipe I tryed it and it was very good. I ask my mom all the time "When are we going to make this?" she never knows she just says when I have time. thats what all parents say all the time and it never happens until you are old enough to do it yourself. Now go home and eat all of these little cheesecakes and don't give them to your kids ( they don't need any : D).

24 Nilla Waffer cookies

4 Eggs

16 oz. Cream Cheese; softened

1 1/2 C. Sugar

2 tbsp. Fresh Key Lime juice

2 tsp. Lime zest

green food coloring- optional

Place cupcake liners into pan, lightly spray. Then
 place one Nilla waffer in the bottom of each liner.

Cream together cream cheese , sugar. Stir in the
eggs blending until smooth. Then add the zest and
juice. If wanting a green tint, add 1 drop green food
coloring.

Pour into each liner filling 3/4 of the way full.
Bake @ 350 to 20 minutes.

My Mom's Mint Lemon Drink:

This is my favorite drink anytime but mostly in the Winter. When my Mom was in college her room mate made this up and my Mom carried it on to our family so I hope you will try it out and like it I certainly did.
It does even look or sound good but after you try it you will fall into a world of  bliss. So better hold on to something and enjoy the yummy world of bliss.!



All you do is get the candy cane sticks and bite the top and bottom off and stick it right in the middle and drink it right up but first take out all of the seeds just in case you swallow them. Well I hope you enjoy these and carry them on to your kids well have a wonderful day!
